Hops and Malt “Beer Bread”

Description
There is no beer added to this bread. Rather, it is a bread whose flavors are inspired by those of brewing, namely the two main ingredients, malt and hops. Expect a light, open, moist crumb flecked with sweet rye sprouts and a crisp crust all backed up by a distinct citrus hop aroma.
This is a bread to pair with cheese and beer. It also makes a nice grilled cheese with some aged cheddar and a tall glass of India Pale Ale.
Ingredients: Unbleached wheat flour, organic stone ground wheat, water, sprouted rye berries, salt, Centennial whole leaf hops.

Raisin Coriander

Description
A rich whole wheat sourdough base with plumped raisins and toasted and cracked coriander. The slight acidity of the bread is complemented by the sweet raisins and the lime zest aromas contributed by the coriander.
Our first day baking this we shared a mid morning snack of this bread sliced warm with blue cheese and sliced apple.

Sprouted Rye

Description
A high percentage whole grain rye bread packed with sprouted rye berries. This bread develops a natural malt sweetness from the sprouted grains and freshly milled flour from Lonesome Stone Milling. Expect a deeply caramelized crust balanced by a dense moist crumb. This bread is highly nutritious and should be eaten in thin slices and paired with other robust flavors.

Available Thursdays and Saturdays around 10:30am. With its superior keeping qualities, we sell this Friday and Sunday if any is left from the previous day.

Rye-Batta

Description
This is a bread inspired by Mike Zakowski from Baking Team USA 2012. It is a wet rye bread containing 50% whole grain rye and wheat. We add a little bit of honey to balance the acidity of the rye and wheat sourdoughs. The shape is similar to our classic ciabatta, the origin of the word meaning “slipper.”

Lonesome Stone Organic Miche

Description
An uncompromising loaf; it comes large, it is baked dark, and its flavor is bold. Our Miche is a Wisconsin interpretation of a classic French country bread highlighting Lonesome Stone Mill and Wisconsin grown hard red spring wheat. The bread is designed for keeping quality, with increased acidity, high hydration, and long bake times for a thick crust or “rind,” and from these elements unique flavors and textures are developed.

Pain aux Cereales

Pain aux Cereales is a naturally leavened grain bread. Ours includes organic rye, millet, poppy seed, and cornmeal. The wheat, corn, and rye are all grown and milled in Wisconsin. The crumb is incredibly moist and tender and studded with grains and seed. This is a good daily loaf of bread. It is versatile, tasty, and nutritious. If you have any left over going stale, this is a great bread for croutons as the added grains contribute a pleasant nutty aroma to any salad.
